FSRV 102 Sanitation, Safety & Hygiene (36 clock hours)
Requirements: Independent worker; ability
to work cooperatively in group lab work- completion of in-class assignments;
ability to complete required textbook assignments; maintain an organized
notebook; tests; participation and daily attendance.
Topics: Exploring the Fastest
Growing Industry: Food Service; Preparing and Serving food with a flair; demonstrate
commercial preparation for all menu categories to produce a variety of food
products; planning of menus based on standardized recipes.

· Practical
curriculum that includes real-world skills and food service concepts.
· At
the end of this course, students may take the examination to receive the
National Restaurant Associations Serve Safe Food Safety and Sanitation
Certificate.
Grading: Students are graded on daily attendance; class project; participation
in cooperative lab work; exams; workbooks.
A project will be required for those students working for the BTC
college credit.
