Semester: 1 and 2

Requirements: Regular attendance,
cooperative work in groups, class notebook, and participation in cooking labs,
daily assignments and exams.
Topics:
This
class introduces the student to the skills and techniques necessary for
choosing and preparing foods that result in nutritious and attractive
meals. Students will prepare foods from
each of the categories of the food pyramid and will learn to use standard
kitchen equipment, including the microwave, food processor and pasta
machine. Other topics will include menu
planning, super-market shopping, nutrition, and food safety.
Special Interest:
· Cooking
labs on a weekly basis
· Students
can earn their Food Handlers Card in class
Grading:
In-class assignments, text
readings, lab evaluations, tests and daily attendance. Students with failing grades will utilize
in-class cooking lab time to improve failing grades instead of cooking.
